Tzatziki is my favourite dip for any occasion really. It goes the best with pita bread, hummus and roasted veggies, but also with spanakopitas or even pizza. It's the beginning of winter and I am craving fresh and light foods. I will make the most of my weekend; put the heating high, pretend it's summer and I lie on the beach, sip cocktails and eat fresh salads and tzatziki.

  • 1 big natural yoghurt
  • 1/2 cucumber, finely chopped or grated
  • 1-2 cloves of garlic, mashed
  • 1 tablespoon chives, chopped
  • 1 tablespoon dill, chopped
  • some salt to taste
  • 1 teaspoon virgin olive oil
Chop the cucumber.  Add yoghurt and all the other ingredients and mix them together.  Serve chilled.
