Vegetarian Burrito

My first experience with Mexican cuisine (or Tex-Mex) was at Tolteca, a Mexican style takeaway restaurant in Dublin that specialises in burritos. I was blown away with the first bite and quickly burritos became my new fave. I ventured then into enchilladas, quesadillas and tacos, but burritos were still the best. 

My boyfriend, my brothers and anyone that was visiting us in Dublin, got addicted also, and I had to start making them myself whenever I went back to Poland for my family and friends. They are really easy to make and can be a fun activity with your loved ones!

  • flour tortillas
  • guacamole
  • rice
  • sour cream
  • can of black beans or kidney beans
  • some pepper 
  • onion
  • lettuce
  • cheddar cheese
Begin with cooking your rice first according to the packaging (you can do that a day in advance). 

In the meantime grill or fry sliced pepper and onion.

Place all the ingredients on top of each other in the center of tortilla in the following order: rice, beans, pepper and onion, lettuce, guacamole, sour cream and cheese. Move the sides of tortilla a bit to mix everything together and then fold the bottom edge up and over the filling, then fold the opposite sides in and over the filling. Roll up the burrito from the bottom. For easier folding and eating, wrap in a tin foil.

Serve with tortilla chips, dips and salad.
