Homemade Garlic Bread
Who doesn't like a little bit of garlicky bread on a Saturday evening with some cheeky pizza or gourmet salad? I became addicted here in Ireland, where garlic baguettes are everywhere and are pretty delicious. I thought I could make my own, which would be healthier, more fresh and cheaper. Try and you won't regret it!
Ingredients (for 2 people):
- 1 baguette or ciabatta/pugliese bread loaf
- 60g /half a stick of butter (room temperature)
- 1 large garlic clove
- some chopped parsley
- salt to taste
Preheat the oven to 180C/ 356F. Spoon the butter into a small bowl. Add crushed garlic cloves, parsley, season with salt and stir until combined.
Cut the bread diagonally into 2/3cm / 1inch slices without cutting completely through the bread. Create gaps between the slices and put a spoonful of the garlic butter into every gap. Spread any remaining butter over the top of the baguette.
Place the roll onto the aluminium foil and wrap it up making sure that you seal the ends well. Place the bread into the centre of the oven and cook for 10-15 minutes until golden brown.
Serve hot and sliced.
