Pesto Pasta Shells



If you haven't noticed yet, pasta is my favourite dish of all times. Doesn't matter the sauce, I could probably eat it every day of the week. I try to stay away from it, because we all know, too much of it can really play with our weight , but from time to time, I just need to have it and forget about the craving.
Today, I will share with you one of the easiest pasta dishes, which can be done in 10 minutes.

Ingredients:
  • pasta in any shape you like
  • 125g of fresh basil
  • some parsley
  • 2 cloves of garlic
  • olive oil
  • pine nuts (can be roasted)
  • parmesan
Start with cooking your pasta. In the meantime put basil into a blender with some parsley, 2 crushed garlic cloves, 6 tbsps of olive oil and 3 tbsps of pine nuts and pulse till blended. Then add 2-3 tbsps of hot water and 3 tbsps finely grated parmesan and blend again. You should get a smooth, little runny consistency. Taste the sauce and add more nuts, parmesan or olive oil if needed. When pasta is cooked, pour the pesto over it and mix it all together. Serve on a plate with mixed greens or salad.
