Roasted Veg & Halloumi
This is one of my favourite Sunday night dinners. I love the taste of grilled, slightly browned vegetables and I adore this combo of veggies, halloumi and tzatziki together. When in doubt, always make this for any night of the week or a party, and every body really likes it.
Ingredients (2-3 people):
- 1 red, yellow or orange pepper
- 2 sweet potatoes
- 2 red onions
- some mushrooms
- some asparagus or long beans
- half a leek
- 1 packet of halloumi
- olive oil
- herbs for roasted veggies
- salt and pepper
Cut all the veggies into medium chunks. Place all in a big oven dish and toss them with a lot of olive oil. Sprinkle some herbs like rosemary and/or thyme and season with some salt and pepper.
Bake for about 30 min. or until cooked.
In the meantime you can cut halloumi into small cubes and cook on a frying pan until brown on both sides. You can cut the cheese after frying or you can also leave the cheese "bare", it's all up to you.
Plate a portion of the veggies on a plate, spread some cheese chunks on top, and finish off with some hummus and tzatziki on top.
