Roasted Veg & Halloumi

This is one of my favourite Sunday night dinners. I love the taste of grilled, slightly browned vegetables and I adore this combo of veggies, halloumi and tzatziki together. When in doubt, always make this for any night of the week or a party, and every body really likes it.

Ingredients (2-3 people):
  • 1 red, yellow or orange pepper
  • 2 sweet potatoes
  • 2 red onions
  • some mushrooms
  • some asparagus or long beans
  • half a leek
  • 1 packet of halloumi
  • olive oil
  • herbs for roasted veggies
  • salt and pepper

    Preheat the oven to 220C/ 425F. 

    Cut all the veggies into medium chunks. Place all in a big oven dish and toss them with a lot of olive oil. Sprinkle some herbs like rosemary and/or thyme and season with some salt and pepper. 

    Bake for about 30 min. or until cooked. 

    In the meantime you can cut halloumi into small cubes and cook on a frying pan until brown on both sides. You can cut the cheese after frying or you can also leave the cheese "bare", it's all up to you.

    While you are waiting on your veggies you can also make hummus and tzatziki to serve it with the salad. Here are the my hummus and tzatziki recipes.

    Plate a portion of the veggies on a plate, spread some cheese chunks on top, and finish off with some hummus and tzatziki on top.
