Simple Gourmet Salad

Are you hungry but don't want to cook? I have plenty of days like this, especially at the weekend, and over the years, I have learned how to deal with being lazy and making a gourmet meal in under 5 minutes.

If you have any greens in the fridge, maybe some cocktail tomatoes, olives or jarred artichoke or roasted red pepper, you are ready to prepare a fabulous meal. You only really need 2 to 3 ingredients and some olive oil and/or balsamic vinegar. This salad is as simple as that, but it always tastes delicious and I come back to it very often. Ingredients (for 2 people):
  • 4 handfuls of fresh spinach 
  • about 20 cocktail tomatoes 
  • salt, pepper
  • olive oil and balsamic vinegar
  • some toasted sesame seeds
Divide the spinach between the two plates. Arrange halved tomatoes on top, sprinkle with some salt, pepper and sesame seeds and pour about 1 tsp of olive oil and vinegar over both salads.  Serve with homemade garlic bread.
