Simple Tomato Linguine

This dish is a more elegant version of Spaghetti Bolognese. If you are bored with this timeless classic, you should try making the Simple Tomato Linguine. It's easy but very, very tasty. It takes probably maximum of 10 minutes to prepare and it doesn't cost much, almost the same as the Bolognese. 

Ingredients (for 2 people):
  • Linguine pasta (amount depends on how much pasta do you like)
  • 1 can of plum tomatoes or 3/4 fairly big fresh tomatoes
  • 1 medium onion
  • 1/2 cloves of garlic
  • some olive oil
  • salt, pepper, oregano, sugar and chilli  (optional)
  • parmesan or similar cheese
Heat the olive oil and add finely chopped garlic for a few seconds. Then add a finely chopped onion, some salt, pepper, chilli and oregano and cook together until tender. After about 5 min add tomatoes, pinch of sugar and cook for another 5/10 min. In the meantime cook your pasta. Taste the sauce and add a bit more spices if needed. You can mix the sauce in the food processor or serve it straight from the pot. Put your pasta onto a plate, pour sauce over it and sprinkle with some more oregano and cheese.
