Sweet Potato Patties


To make these sweet potato patties I used a recipe posted on The Happy Pear Cafe's facebook page.  I love their food but they are so far away from me that I can visit them only once every couple of months. They finally started posting some of their newly invented recipes and I've been following them ever since. You need quite a good few ingredients to make these delicious cakes but it's well worth it. And to be honest once you buy them, you'll use them all the time in your kitchen so it's an investment :). And on the bright side, they're quick and easy to make, that's why I love them even more. You can make them bigger than I did and serve them on their own, or make them smaller and serve with a salad and some couscous or rice. Hope you'll like them too.

Ingredients (for 10 small cakes):

Sorry, but I don't have the exact measurements because there wasn't any, so you will have to try everything while making them.
  • 2/3 sweet potatoes
  • 1 tin or 400g of cooked chickpeas
  • 1 red onion (chopped)
  • 1/2 bunch of scallions (chopped)
  • 1/4 bunch of parsley/coriander/cilantro
  • spices: ground cumin, cumin seeds, ground coriander, paprika, salt, black pepper
  • lemon juice
  • soy sauce
Peel and chop sweet potato and bake it or cook it until soft. Cook chickpeas if you're not using canned ones. In a large bowl put cooked veggies and mix them with either a blender, mixer or by hand with potato masher. Add soy sauce, lemon juice, all spices and mix it again till smooth. At this point you should taste the mixture and add any spices to your taste.
Then you can add finely chopped red onion, scallions and parsley to give it some texture. Mix it well with a spatula or by hand. Roll them to desired shape and bake in the oven for about 20/25min. in 180C.  It took me a little bit longer so you should keep that in mind and check before you take them out completely. Serve with any type of relish, tzatziki or hummus.
