Tomato Basil Soup
A simple soup for when there is no time to make anything else. You need just a few ingredients, which are probably in your cupboard, and 10 minutes to prepare it. Easy doesn't mean boring or bland. This soup is quite sophisticated. If you want to get a bit more fancy, serve it with shredded parmesan cheese and some crostini on the side. I also added more chopped tomatoes to an already blended soup and a couple more basil leafs for decoration.
Ingredients (for 2 people):
- 1 can of chopped tomatoes or 6 large tomatoes
- 1 small red onion
- 3 tbsp olive oil
- 2 cloves garlic
- 1/4 cup heavy cream
- 1/4 cup fresh basil
- some salt, cayenne pepper and sugar to taste
Heat the olive oil in a pan. Chop finely the onion and when the oil is hot, add the onion to the pan and cook until translucent. Add a pinch of salt, crushed garlic and cayenne pepper, and cook for another 30 seconds.
Add the chopped tomatoes, basil leafs and about 150ml of water. The more water you add, the less of a cream you will get; start with less, and you can always add more later. Cook for about 5 minutes.
Take off the heat and blend until smooth. Place back on the stove and add the cream and salt, sugar and cayenne pepper to taste. Cook for another 2-5 minutes and serve.
