Cheese, Walnut & Date Balls

Bite size cheese balls ideal for a party or as an appetizer. They are amazing with a glass of wine on a Saturday night in. Serve with crackers and fruit for more posh presentation.

Ingredients (20 balls):
  • 150g of blue cheese
  • 1 tbsp of milk
  • 200g cream cheese
  • 5 pitted dates or 3 big figs
  • 1 tbsp minced shallots
  • 1/2 tsp grated lemon zest
  • some salt to taste
  • some black pepper to taste
  • bunch of fresh parsley and about 200g of finely chopped walnuts for coating 

Put first 3 ingredients in a large bowl and beat with a mixer until smooth and creamy. Then add dates, shallots, lemon zest, salt, and pepper. Mix it until well blended, scraping sides of bowl as necessary. Cover with foil and leave it in a fridge for about 30min to an hour.

Chop parsley and nuts. Combine them together in a shallow dish. Take your cheese out from the fridge, form little bowls and putt them aside. When you're finished gently put your balls in the dish with the nut mixture and roll them until coated well enough. Place on a serving plate. Serve immediately, or cover and refrigerate until ready to serve.
