Tortilla Soup

I fell in love with Tortilla Soup just a few weeks ago. This is a tomato based soup of Mexican origin. I was invited to a dinner party prepared by my new friend from Mexico, Lorena, and it blew me away. I can't believe I never heard of it before. It's very simple but combines all the greatest flavors on this planet. I made a big pot of the soup yesterday and will have it for the entire Easter. You can find lots of different recipes on the net but this is what I made:

Ingredients (for 4/6 people):
  • 1 can of chopped tomatoes
  • 1 medium onion
  • 2 cloves of garlic
  • some olive oil
  • some chilli peppers to taste
  • 2 ltrs of vegetable stock (you can use stock cubes if you like)
  • salt, pepper, ground cumin and coriander to taste
  • 2 tbsp of lemon juice
  • 2 avocados
  • 1 feta cheese
  • tortilla chips
  • 1 sour cream
Heat one tbsp of olive oil in a saucepan and saute finely chopped onion for 5 minutes along with some salt, pepper, 1 tsp of cumin and 1 tsp of coriander. When onions are translucent add garlic, chillies to taste and tomatoes. Cook for another 5 minutes. Then add vegetable stock and bring it to a boil. At this point you can also add chopped cilantro and lemon juice and let it cook on medium heat for about an hour and half over low heat. Check if you need to add any spices or lemon juice (the taste should be quite sour) during that process. After it's cooked mix all the ingredients so the soup is smooth and serve hot with a dollop of sour cream, tortilla chips or strips, crumbled feta and avocado.
