Roasted Vegetables

If you have a lot of vegetables in your fridge, but don't know what to make, I strongly advise you roast the hell out of them! I believe, any veg roasted with some good tasting olive oil and herbs, will make you drool. You can roast pretty much any veg on this planet, it's all up to your imagination, and you need to know only a few tricks to make it right.

I like roasting on a Sunday, when I don't want to stay in the kitchen for too long, and want to enjoy the last hours of the weekend. I have learnt that the best roasted vegetables are made when you don't plan it, keep an eye on it and give it a good, glossy coating of fruity olive oil! 

There is no exact recipe here, just cut your vegetables in bite size chunks, drizzle with olive oil, season with salt and pepper and garnish with herbs. Spread them out on a large baking sheet, preferably so that they don't touch each other, and bake in a preheated oven to 220C / 425F until tender and charred on the edges.
