Cucumber & Mint Salad

Refreshing and simple salad perfect for Summer lunches, BBQ's and picnics. Salting and draining the cucumbers ensures they stay crunchy and fresh for a long time. Soaking the onion, tames its strong bite. Just a few ingredients and couple of easy steps, to get this amazing and fresh salad on your table.

Ingredients (2 portions):
  • 500g / 1 lbs cucumbers
  • 1 teaspoon salt
  • 2 slices chopped red onions
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil 
  • 1-2 tsp sugar 
  • some freshly ground black pepper 
  • 1/8 cup fresh mint or dried (or both)

Wash the cucumbers and cut in half lengthwise. Use a teaspoon to scrape out the seeds, and then cut into thin wedges/slices. Toss them with salt in a colander and let them drain for 15 - 30 minutes. Before using, dry them as much as possible.

Chop the red onions finely and place them in a small bowl with ice water for 10 minutes. Drain and set aside.

In a bowl, combine the cucumbers, onions, white wine vinegar, olive oil, sugar, pepper and mint, and toss until all well coated. Taste and add any seasoning to your taste. 

Cover and chill for about 20 minutes before serving.
