Pasta Bake with Cherry Tomatoes & Basil

Pasta bake is one of the easiest meals you can make, and you can put anything you want in it. It is also very affordable, so you don't have to spend much to have a fabulous dinner. You can also make it in big batches and freeze it for future dinners.

This time I made it very simple and used only cherry tomatoes to make this delicious and comforting dish. Together with white wine, basil and parmesan, they married beautifully and tasted like a restaurant dish!

  • 350g dried penne
  • 1 tin chopped tomatoes
  • 1 onion
  • 2 cloves of garlic
  • 500g cherry tomatoes
  • 1 tsp dried chilli flakes
  • 200ml white wine
  • 100g parmesan cheese
  • 10 large basil leaves 
  • 1 tsp sugar
  • olive oil
  • salt and pepper

Preheat the oven to 200C /400F. 

Heat a saucepan big enough to hold all the ingredients, and pour in a splash of olive oil. Chop the onion finely and add to the oil. Cook for 5 minutes. 
Add sliced in half cherry tomatoes, and minced garlic and cook for 1 minute. 

Add white wine, turn the heat down and cook until the wine has reduced in half.
In the meantime boil the penne for 5-6 minutes until al dente.

Add the tin of tomatoes to the pan, chilli flakes, sugar, basil, some salt and pepper, and cook for about 5 minutes.

Once penne is ready, add it to the saucepan, stir in half of the parmesan (grated), season with salt and pepper if necessary, toss together and transfer to a baking dish. Sprinkle with the rest of the parmesan and bake until crispy and golden on top.
