Roasted Red Pepper Hummus
There are many tasty recipes for hummus and also ways of using it. Start with making the basic hummus and once you get the gist of the taste and consistency you like, you can experiment with adding other vegetables and spices for more variety.
I like eating my hummus as a meal with a piece of bread, but it's great on sandwiches and as a side to a salad or in a wrap.
- 1 can of chickpeas
- 1/2 cup jarred roasted red pepper
- 1/2 tsp of ground cumin
- 1/2 tsp of smoked paprika
- 1/4 tsp of salt
- 2 garlic cloves
- 2 tbsp of tahini
- 1 tbsp of lemon juice
- 2 tbsp of olive oil
- 2 tbsp of natural yoghurt
- cayenne pepper or chilli sauce to taste
Place all the ingredients except the yoghurt and cayenne pepper/chilli sauce (if using) in a food processor and combine together. Then scrape down the sides, add yoghurt and pulse a few more times. If the paste seems too thick, you can add more oil, yoghurt or just water, but add small portions at a time, pulse and check the consistency before adding more. Pulse for about 5 minutes for a smooth paste. If you prefer more grainy consistency, you can finish now.
Add more salt, lemon juice or hot spices to taste and serve.
