Red Lentil Patties
Delicious and sweet red lentil patties, perfect with a salad or in a burger. Bring with you to BBQ's, beach days and play dates.
- 1 cup of cooked red lentils
- 1 cup of cooked chickpeas
- 1 Tbsp of olive oil
- 1 cup of onion (chopped and fried)
- 1 small carrot (grated or finely chopped and cooked)
- 1 Tsp of cumin powder
- 2 Tsp of curry powder
- 1 Tsp of garlic powder
- Some lemon juice
- Some breadcrumbs (optional)
- Salt and pepper to taste
- 1 egg (beaten)
To start with these patties cook your vegetables first.
Then preheat your oven to 220 Celsius (about 430F). Heat olive oil in a large frying pan and add onion to cook until softened. If you are grating your carrot, add it to the pan at this stage. Remove from heat and stir in spices and some lemon juice.
Chop pre cooked lentils, chickpeas and carrot (if you prefer the chopped version) in a food processor. Make sure not to over do it, the ingredients have to come together but cannot be completely puréed. You want some chunkiness in your patties. Remove from food processor and stir in onion mixture and a beaten egg. At this stage you can also add some bread crumbs, I didn't use that. The consistency should be moist, not runny, for the burgers to hold together. Mine were a bit too runny so from now on I will use the breadcrumbs.
Divide the mixture in a medium sized balls. Place on a baking sheet sprayed with non-stick cooking spray or lined with parchment paper. Place patties on the tray and press down to get the patties' shape. Place in oven and bake for about 15 minutes or until slightly crisp on both sides. You can also fry them (like I did) but baking option is much healthier.
