Spicy Curry Couscous
I discovered couscous just a few months ago when my boyfriend told me that his mum used to make it often. I was so intrigued that I spent the next hour watching videos on YouTube to learn how to make it and then went to the shop and got a packet.
I made this spicy couscous and I loved everything about it; the sweetness of the raisins were complemented by the spicyness of paprika and curry powder, it was heavenly. Hope you will try it and like it too!
- 1 cup of couscous
- 1,5 cups of boiling water
- 1 Tbsp of brown sugar
- 2 Tbsp of unsalted butter
- 1 Tsp of curry powder
- 1 Tsp of spicy paprika powder or chilli powder
- some golden raisins
- some teaspoon salt
Melt butter and sugar over medium heat until all melts. Cook then for about 3 minutes stirring continuously. Add the boiling water, couscous, spices and raisins to the pan and stir to combine everything together. Cover and remove from heat. Let stand for 5 minutes and then fluff with a fork and serve. I made some beetroot salad and fried courgette slices to go with it and it was delicious.
