Edamame, Chia & Almond Salad

This salad is great as a side dish or lunch. Very easy to make, takes only about 2 minutes to assemble. Sweet, tangy and crunchy. To kick it up a notch, add some chopped jalapeño or chilli pepper.  

I know it's too early to think about spring and green salads, but I wanted to share with you my favourite quick meals from last year to start this New Year healthy and full of energy. 

Ingredients (2 people):
  • 250g / 1/4lb cooked edamame
  • half a lemon
  • 1 tbsp olive oil
  • 1 tbsp chia seeds
  • 2 tbsp almond flakes
  • some sugar, salt and pepper to taste
  • jalapeño or chilli peppers (optional)
Rinse edamame and place in a bowl. Add the seeds, lemon juice, olive oil and toss together. Add as much jalapeño as you want. Season with sugar, salt and pepper and serve. You can prepare this salad a few hours in advance.
