Blueberry Mini Pancakes

These little pancakes are my favourite Sunday breakfast. Light, fluffy, sweet and full of wild blueberries. You can serve it with powdered sugar or maple syrup.

  • 1 cup of flour
  • 1 cup of milk
  • 1 tbsp of baking powder
  • 2 tsp of sugar
  • 1 egg
  • 1/2 tsp of salt
  • 1/2 cup of blueberries (can be frozen)
  • 1 tbsp of oil or melted butter

Sift the flour, salt and baking powder into a large bowl. In a separate bowl combine milk and egg and whisk it a little bit. Add the wet ingredients to the flour and mix it together. Finally add the melted butter and blueberries, mix it well and cover with a cling foil. Put it aside for about an hour to rise a little bit and then fry as normal pancakes. If you do not want to wait, you can cook them straight away, I did that many times, but they won't be as fluffy as they would be after the wait.
