Spaghetti Aglio e Olio

I am very fond of recipes that are easier and faster to make than ordering a take out. Pasta is probably my favourite dish to make any day of the week and any occasion. Spaghetti with oil and garlic is the most simple and economic dish you can dream off and will always make an impression on your guests, date or even your kids. It's a classic that has been around for a very long time and it is definitely a comfort food! The ingredients list is very short, it takes less than 10 minutes to make it and the only thing you need to make it right, is to cook your pasta al dente.
I am pretty sure you have all the ingredients in your cupboard so let's get cooking!

Ingredients (4 servings):
  • 400 grams spaghetti
  • 3 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons chopped parsley
  • 1/2 of lemon (zest)
  • grated parmesan 
  • salt and pepper
  • 2 tbsp of roasted pine nuts (optional)

Bring a large pot of cold salty water to a boil. Add the pasta and cook until al dente, check for instructions on the packaging.

While the pasta cooks, slice the garlic and place in a cold frying pan. Add olive oil and turn the heat on to medium. Once the oil starts bubbling a little bit, turn the heat to low and let the garlic cook and toast to golden brown. Just before the garlic is ready (about 5 minutes in), add the red pepper flakes and cook for about 30 seconds. Then turn the heat off and add 1/2 a ladle of the pasta water to cool down the oil. 

Drain pasta and add to the garlic mixture. Season with salt, add chopped parsley and mix well. Add roasted pine nuts, lemon zest, top it off with parmesan and serve.
