Fried Egg & Avocado Breakfast Pizza

Fancy something completely different for your breakfast or weekend brunch? I have a great one for you! This breakfast pizza is healthy, fun and delicious. It also takes only a few minutes to make so that's always a plus for those lazy Sunday mornings.
Be careful though, once you try it, you will be eating it five times a week, it's so good! 

Ingredients (2 people):
  • 2 pita breads
  • 2 eggs
  • 1 avocado
  • lemon juice
  • salt and pepper

Start with cooking the eggs. You can poach or fry them, whatever you prefer. I fry my eggs for this recipe.

Toast pita breads until crisp. 

Mash avocado with some salt and lemon juice and spread on warm pitas. 

Place one egg on top of each pita, sprinkle with some freshly ground pepper and more salt and serve. You
can also add some sprinkling of feta cheese.
