Fig, Arugula & Goat Cheese Salad

Fresh sweet figs with soft goat cheese and grilled brussels sprouts, over baby arugula topped with a balsamic glaze. This is the ultimate summer salad for your elegant Sunday brunch. This classic pairing of goat cheese and figs is so incredible, you will want to eat it every day. You can stick to a simple version with just three ingredients, or you can play around and add grilled brussels sprouts and/or toasted nuts. You can also grill the figs. It can be made in several different ways but will always taste delicious and look even better!

Ingredients (2 people):
  • 2 cups arugula
  • 8-10 small or 4-5 big fresh figs
  • 12 small brussels sprouts
  • 80g (2.8oz) soft goat cheese
  • balsamic glaze

Half the brussels sprouts and grill them with some olive oil and salt to taste. Put aside. Half or quarter (depending on the size) figs. Arrange arugula in a bowl or a plate. Top with brussels sprouts and figs. Sprinkle with chunks of goats cheese and season with balsamic glaze. You can also add some virgin olive oil.
Serve with toasted bread.
