Brown Rice & Lentil Burgers
A few years back, in Dublin, there wasn't a week where I haven't visited my favourite vegetarian deli, Blazing Salads. I sometimes would have lunch there during the day, and then in the evening, I would pick up some more of their delicious soups, salads and burgers for dinner. It was a tiny tiny store/deli, but had so much fresh and healthy food to choose from, that I could've easily ate there every day.
Despite the large selection, my ultimate favourite was red lentil and brown rice burger; always served with pesto and salsa. Cold or hot, it was delicious!
I tried to re-create them several times but I was never happy enough. I remember looking for the recipe on-line and I also bought their book, but this recipe was nowhere to be found. Until last weekend!!! I was sick, stuck at home, so I decided to look for some new vegan recipes for the next week. I thought I would check their website again to see if there is anything new and voilà! I found it!!! You would love to see my face :) I went straight into the kitchen, checked if I had all the ingredients and an hour later we were eating these delicious patties. This is definitely a recipe that stays with me forever and if you are ever wondering what to make when trying out a vegan diet, start with these and you won't be disappointed.
Ingredients (6/8 burgers):
- 400g cooked brown rice
- 300g red lentils
- 1 tsp red chilli
- 2 tbsp fresh coriander or green onions
- 2 tbsp red onion
- sea salt and pepper to taste
Wash the lentils 2 to 3 times, until the water is clear. Place in a heavy-bottomed pot and cover with water (about 500ml). Do not add salt. Cover, bring to boil and then reduce the heat to a simmer and cook until all the lentils are cooked and mushy (about 20 mins). Stir every few minutes so they don't stick to the bottom of the pot.
Place cooked lentils into a large bowl and add the cooked rice and the rest of the ingredients. If you don't like coriander (we don't) you can used green onion/ scallions or anything green really, it is just for looks more than taste. Season with salt and pepper to taste. Divide into 6 or 8 portions, dampen your hands and shape into burgers (6 pieces) or patties (8 pieces). Place in the fridge to chill and set. Fry them until golden brown on both sides.
Serve with pesto or salsa like the original recipe says or you can make my red pepper relish.
