Chickpea, Tomato & Goat Cheese Salad
Over 1,5 years ago, when we where in the middle of leaving Ireland and moving to the States, we went travelling all over Europe for a month. Our last stop was Portugal and that was the best few days of the trip. We were so pleasantly surprised with the architecture, people and food, that we still talk about it almost daily.
Because I am a foodie, the Portugal cuisine made the strongest impression on me; I was taking notes and photographs not to forget what we tried and liked. I came back with over 10 dishes to try out and a good few pastries, because Portugal is just the best at them! This salad was my first meal after arriving in Ericeira, a small seaside town north off Lisbon. That was a one and only vegetarian option on the menu, but it was so good, I ordered it twice in one evening and I went back for it the next day also. It is made off only 4 ingredients and it's delicious!
- 1 can chickpeas
- 2 tomatoes (red and yellow or small cocktail tomatoes)
- 2 slices of red onion
- 70-100g of semi-softe goat cheese (I used Spanish Drunken Goat)
- salt and pepper to taste
- 1 tbsp olive oil
Rinse chickpeas and place in a bowl. Chop the tomatoes and add to the bowl. Chop the onion finely and also add to the bowl. Pour some olive oil on top, add some salt and pepper to taste and toss to coat all of the ingredients. Cut the cheese into small cubes and add to the salad. Toss gently and serve.
