Avocado & Walnut Salad

Last week I wrote about eating one-pot hearty meals, but this week I am craving salads. I think this is my body telling me I have had enough of winter! I miss not having to worry too much about dinner and standing in front of the stove for hours. I miss going to the grocery store for just fresh produce. I miss the sunshine and my tan.

This week I decided to fake summer. I am planning to eat as much of fresh veg as possible and have smoothies for breakfast. This salad is very fresh and summery, I ate something similar few times at Pizzeria Delfina in Palo Alto last summer, so I bet it will put me in the right mood. Now I only need their Ragazza cocktail to go with it and I will be a one happy girl!

Ingredients (2 people):
  • 4 cups or handfuls of iceberg lettuce
  • 1 large avocado
  • half a cup of walnuts, chopped finely
  • olive oil
  • lemon
  • some jalapeño or radish slices
  • salt and pepper to taste

Wash and dry the lettuce. Tear the leafs with your hands and place them in a bowl. 

Toast the walnuts and then chop finely. Add to the lettuce.

Add some jalapeño or radish slices and drizzle everything with 1 tbsp of olive oil and about the same amount of lemon juice and mix everything together. 

Add the avocado slices, add salt and pepper to taste, and toss the salad gently not to brake the avocado too much. You can add more olive oil and/or lemon juice if you'd like and serve.
