Egg Salad 2 Ways


If you are like me, you always try to be more healthy and eat better in the New Year. It doesn't usually last that long, so lets try it together and this be our new motto: New Year, New Me & You! Fair play for trying again and lets keep each other motivated!

I love egg salad for its versatility and easiness. I'm not talking about the traditional egg salad full of mayonnaise that is heavy and so unhealthy. Mixed greens with some veggies and seeds as a base to my eggs and a bit of mayonnaise are my favourite go to lunch. If you boil your eggs in advance, you can have a healthy meal in under 5 minutes.

Ingredients (2 people):
  • 3 cups of romaine lettuce
  • 1 cup of shredded red cabbage
  • 10 (5 each) cherry tomatoes
  • 3 - 4 eggs
  • 2 tbsp olive oil
  • 2 tbsp roasted sesame seeds
  • some mayonnaise
  • pepper and salt to taste
  • lemon juice

Put lettuce, cabbage and cherry tomatoes in a bowl. Drizzle with olive oil and some lemon juice. Add spices to taste and mix. Plate and place egg wedges on top. Squeeze the mayonnaise on top.

If making the salad without tomatoes, use more red cabbage and add the sesame seeds when mixing in the olive oil and spices.
