Summer Salad with Peas, Rocket, Radishes, Strawberries & Feta
This is the ultimate summer salad; fun and full of fresh and healthy ingredients.
Salads are an essential part of summer because they are quick and easy to make, and look spectacular with minimal to no cooking. They can be as colourful as a rainbow, and delicious as an ice cream on a hot day. With the abundance of produce in this time of the year, the possibilities are endless, and you can get creative with your family or friends at your Sunday BBQ or next kids party.
I am pretty sure everyone will love this salad; adults and kids alike. Once you add some sweet and juicy strawberries to any salad, everyone will be intrigued and will want to try it asap. Such a small touch can elevate a meal from a standard bowl of lettuce, to a unique pairing of the best ingredients of the season.
If you read my blog regularly, you will know that I don't pay that much attention to dressings, as I like my salads light and fresh. This time though I had an idea of using fresh herbs from my balcony, and the dressing came out really interesting and went well with the salad. I would still serve it on a side, especially if you want your kids to eat the salad, but you shouldn't skip that part, as it adds another interesting dimension to this meal.
Ingredients (2 main courses):
For the salad
- 100g wild rocket
- 10 large strawberries
- 4 large red radishes
- 1 small avocado
- 1/3 cup of fresh or canned peas
- 2 thick slices of feta
For the dressing
- 1/4 bunch coriander
- 1/4 bunch of mint
- juice of 1 lemon
- 1/4 cup olive oil
- 1 garlic clove
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- salt and pepper
If you are using fresh peas, boil some water in a pan, and add peas for 30 seconds. Then remove and place them in a bowl of ice cold water. Rinse.
Prepare dressing. Place all ingredients in a food processor and blend.
Place washed rocket on a plate, cut strawberries in quarters and arrange on top of rocket. Cut avocado into cubes, shave radishes on a mandolin, and add to the salad. Sprinkle with peas and feta chunks. Season with salt and pepper to taste.
Serve with dressing on a side.
