Watermelon, Mint & Feta Skewers
This is the easiest appetizer in the world! It will please everyone from the hardest food critics to your next door neighbour. The saltiness of the feta compliments the sweetness of the watermelon so much, everyone will be copying this for their next summer gathering. It is refreshing, and it's so pretty, you cannot stop looking at it!
This was one of my favourite snacks this summer. It is so easy you don't really need a recipe to make it. What I usually do is buy a chunk of feta, and one watermelon. I cube both in similar sizes, and pop them onto skewers in 2:1 ratio; 2 cubes of watermelon to 1 cube feta. I thread some mint in between, and serve it on a bed of rocket/arugula with a splash of balsamic vinegar. That's all. The most important in preparing this is making sure you have the best quality ingredients that are fresh and cooled before serving.
When choosing your watermelon, make sure it is dull looking on the outside, shiny exterior means it is not ripe enough, and has a dark yellow patch, which indicates the watermelon was resting on the ground, and it had enough time to ripen up. The fruit should also be heavy for its size, which means it is very juicy.
When buying feta for this appetizer, choose the more expensive type made with sheep's milk, as they are much more creamy, and not as salty as cow's milk. This is important, as you don't want the cheese to crumble too much, and you also want that extra bit of sheep's milk taste, which goes beautifully with the sweet and crisp watermelon.
